WITH SPINACH, SUN-DRIED TOMATOES & TOFU
This delicious and spectacular looking quiche is so tasty! I created this recipe just by adding a bunch of ingredients together. That is my favorite way to develop new recipes. And this one turned out amazing right away. Mo and I had so much fun making this quiche together.

INGREDIENTS (4 servings)
Quiche crust, vegan and gluten-free (store bought or make your own)
750 g tofu
280 g sun-dried tomatoes, chopped (plus some of the oil)
100 g spinach
lots of dried oregano
3 cloves garlic, minced
60 g vegan mustard
1 tbsp lemon juice
Himalayan salt, to taste
Roll out the crust in a round baking pan.
Next, in a high speed blender, mix together the tofu, dried oregano, minced garlic, mustard, lemon juice, some of the sun-dried tomatoes oil (just the oil, not the dried tomatoes yet), and salt into a soft paste.
Chop up the sun-dried tomatoes into smaller pieces.
Remove the paste from the blender, mix in the sun-dried tomatoes and spinach, and add the paste to the baking pan.
Bake in a pre-heated oven on 200 °C for 10 min.
Serve with a delicious salad and enjoy!
